Cranberry Almond Orange Cookies

Ingredients:

  • 1/4 tsp salt
  • 1 tsp baking soda
  • 1 tsp cinnamon
  • 1/2 cup rolled oats
  • 1/2 cup almond flour
  • 1 cup oat flour
  • 1 medium orange, peeled
  • 2 Tbs chia meal
  • 1/4 cup liquid coconut oil
  • 1/4 cup maple syrup
  • 2 Tbs coconut sugar
  • 1 Tbs lemon juice
  • 1 tsp vanilla extract
  • 1/2 cup sliced almond
  • 1/2 cup dried cranberries
  • 1/2 cup dark chocolate chips

Instructions:

  1. Preheat oven to 350° and line a baking sheet with parchment paper.
  2. In a high-speed blender blend the orange into juice. Add it to a bowl with the chia meal and whisk together. This will be your vegan egg.
  3. In a medium bowl mix together the first group of ingredients.
  4. Add the rest of the wet ingredients (second group) to your orange ‘egg’ and
    whisk together.
  5. Add the dry ingredients to the wet ingredients and thoroughly mix together. Fold in the third group of ingredients.
  6. Scoop 2 tablespoons of cookie dough onto prepared baking sheet. Lightly flatten the top with a fork.
  7. Bake for 10-14 minutes. Allow to cool completely (although they’re pretty delicious with the chocolate chips are still melty).
